Strawberry Shortcake Protein Pancakes ~ Gluten Free

As promised kids my extra sexy Valentine’s Day special gluten free Strawberry Shortcake protein pancakes courtsey of my amazing partner in crime. Enjoy the quick easy recipe is below!
1/2 – 1 cup chopped strawberries – (I love them so 1 cup for me it is)
1/3 cup of Bob’s gluten free flour pancake mix
1 scoop vanilla vegan pea protein powder (use a clean whey protein if you wish)
2/3 tsp baking powder
2 1/2 tbsp old fashion oats gluten free
about 1/2 tsp vanilla extract
1/3 cup almond milk (unsweetned vanilla) is all we buy
2 packets truvia (stevia) natural sweetener
1 tsbp organic virgin coconut oil
Combine everything in a BIG bowl, mix and test your pancaking making skillz…..
Optional for toppings : 1 can dairy whip cream spray for topping – maybe 1-2 small squirts is all you need (moderation guys)
sprinkles – but only for winners, sprinkles are for winners only (it just makes them that much more awesome trust me )
